The Pumptini is a sweet and tart cocktail made with vodka, grapefruit juice, lime juice, orange liqueur, and raspberries. It is a popular drink at SUR, Lisa Vanderpump’s restaurant in West Hollywood, California.

Ingredients

  • 3 raspberries

  • 3/4 ounce simple syrup

  • 3/4 ounce orange liqueur (such as Cointreau)

  • 3/4 ounce grapefruit juice

  • 3/4 ounce lime juice

  • 2 ounces vodka

  • Ice

  • 1 raspberry, for garnish

  • Muddle the raspberries and simple syrup in a cocktail shaker.
  • Add the orange liqueur, grapefruit juice, lime juice, and vodka.
  • Add ice and shake vigorously for 30 seconds.
  • Strain into a chilled martini glass.
  • Garnish with a raspberry.

Notes

  • For a sweeter Pumptini, use more simple syrup.
  • For a tarter Pumptini, use less simple syrup or add more grapefruit juice.
  • To make a raspberry-infused vodka, muddle some raspberries in a jar with vodka and let it sit for a few days. Then, strain the vodka and use it to make your Pumptini.
  • You can also garnish your Pumptini with a grapefruit twist or a lime wedge.
