Ingredients

  • 1 (14-ounce) can lychees, drained and rinsed

  • 1 cup water

  • 1/2 cup sugar

  • 2 teaspoons agar agar powder

  • In a medium saucepan, combine the lychees, water, and sugar. Bring to a boil over medium heat, stirring constantly.
  • Reduce heat to low and simmer for 10 minutes, or until the sugar has dissolved.
  • Sprinkle the agar agar powder over the liquid and stir until dissolved.
  • Pour the mixture into a 6-cup mold or dish.
  • Refrigerate for at least 4 hours, or until set.
  • To serve, invert the jelly onto a serving plate.

Notes

  • To make sure the jelly sets properly, make sure the agar agar powder is dissolved completely.
  • If you don’t have a mold, you can pour the jelly into a 9×5-inch loaf pan.
  • To make the jelly ahead of time, simply prepare the jelly and refrigerate it for up to 2 days before serving.

Here are some additional tips for making the best lychee jelly:

  • Use fresh lychees if possible. They will have a more intense flavor than canned lychees.
  • If you can’t find agar agar powder, you can substitute another type of gelatin. However, the texture of the jelly will be slightly different.
  • To make the jelly more colorful, you can add a few drops of food coloring.
