Betty King Arthur Sourdough Pancakes were first created by Betty King Arthur, a home cook who loved to experiment with different recipes. She found that using sourdough starter gave her pancakes a unique flavor and texture that she couldn’t get with regular pancake batter.

Betty King Arthur Sourdough Pancakes are a delicious and easy way to use up your sourdough starter. They are light and fluffy, with a slightly sour flavor that is perfect for breakfast or brunch.

Ingredients

  • 1 cup sourdough starter

  • 1 cup milk

  • 2 eggs

  • 1 tablespoon sugar

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 1/2 cups all-purpose flour

  • Vegetable oil, for cooking

  • In a large bowl, whisk together the sourdough starter, milk, eggs, sugar, baking powder, baking soda, and salt.
  • Gradually add the flour, whisking until just combined.
  • Heat a large skillet or griddle over medium heat. Grease the pan with a little bit of vegetable oil.
  • Pour 1/4 cup of batter onto the hot pan for each pancake. Cook for 2-3 minutes per side, or until golden brown.
  • Serve immediately with your favorite toppings.

Notes

  • For extra fluffy pancakes, let the batter rest for 10-15 minutes before cooking.
  • If you don’t have sourdough starter, you can substitute 1 cup of buttermilk.
  • You can also add your favorite toppings to your pancakes, such as fruit, syrup, or whipped cream.
