Ingredients

  • 2 cups all-purpose flour, plus more for dusting

  • 4 large eggs, at room temperature

  • 1 teaspoon salt

  • 1 tablespoon olive oil

  • Place the flour on a clean work surface and make a well in the center.
  • Crack the eggs into the well and add the salt.
  • Use a fork to gently whisk the eggs, breaking them up as you go.
  • Gradually start incorporating the flour into the eggs, using your hands to form a shaggy dough.
  • Once the dough starts to come together, turn it out onto a lightly floured surface and knead for 8-10 minutes, until it is smooth and elastic.
  • Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes.
  • Once the dough has rested, divide it into four equal pieces.
  • Roll out each piece of dough on a lightly floured surface until it is as thin as you can get it.
  • Cut the pasta dough into your desired shapes.
  • Bring a large pot of salted water to a boil.
  • Add the pasta to the boiling water and cook for 2-3 minutes, until it is al dente.
  • Drain the pasta and toss it with your favorite sauce.

Notes

  • If you want to make colored pasta, add a few drops of food coloring to the dough before kneading.
  • For a fun twist, try adding herbs or spices to the dough.
  • If you don’t have time to make your own pasta sauce, you can use a store-bought sauce. Just be sure to choose a sauce that is high quality and has a good flavor.
  • To make the pasta even more delicious, top it with some grated Parmesan cheese or fresh herbs.
